curry chicken salad

curry chicken salad


2 cups chopped chicken
2 stalks celery, chopped
½ cup dried apricots, chopped
¼ cup mayonnaise
¼ cup plain yogurt
¼ cup light coconut milk
1 tablespoon curry powder
salt, pepper, sugar

Mix chicken, celery, apricots.

Mix mayonnaise, yogurt, milk (add up to an additional ¼ cup of coconut milk) and curry powder. Add salt and pepper to taste. Add a dash of sugar.  

Add dressing to chicken mixture. 

Let chill in refrigerator for at least one hour before serving.
